How to Kill Spam on your Drupal Contact Form

Lisa from North Vancouver emailed me this question:

Q. I have noticed on the two Drupal sites I've developed so far that the universal contact form draws a great deal of spam email. I've tried the captcha module, using the image captcha as well as the mathematical question version. Neither of these approaches have stopped or prevented the influx of spam occurrences. I was wondering how you approach your clients contact forms for this issue?
